WHAT IS KEFIR?
Kefir is a fermented drink, traditionally made using cow’s milk or goat’s milk. It is originally produced in the Caucasus region of Russia. It has been popular in parts of Europe and Asia for many years, but has only recently started gaining popularity in the United States due to the growing interest in probiotics and intestinal health.
HOW TO MAKE KEFIR AT HOME While kefir is typically made from cow’s milk, you can also use other types of milk such as goat’s milk or non-dairy milk (soy milk, almond milk, coconut milk). For dairy milk (cow’s milk or goat’s milk), you can use fresh milk (full-cream or low-fat) or homogenized milk. However, if you are making kefir for the first time, we recommend that you start with homogenized milk. For every 500 ml of milk, use 1 sachet of Original Kefir powder. Ferment for 24 to 36 hours at around 25 degrees Celsius.
STEP-BY-STEP INSTRUCTIONS 1: Pour 1 sachet of Original Kefir powder into 500 ml or 1litre of milk. Shake the container up and down for about 10 times to ensure that the kefir powder is well mixed with the milk. Caution: do not spill the milk while shaking the container.(Alternatively, you can also pour the kefir powder into a clean glass jar (not metal) and add the milk. Use a wooden or plastic spoon (not metal) to stir and mix well. Cover the jar with a piece of cheesecloth or a paper towel and secure it with a rubber band.) 2: Place the container of milk and kefir powder mixture in a cool dry place with a temperature of around 25 degrees Celsius. Leave the mixture to ferment for 24 to 36 hours. Don’t shake the mixture during the fermentation process. 3: When you can see curds on the surface of the milk, the fermentation is done. The fermentation time required depends on the temperature and type of milk used. If the temperature is below 20 degrees Celsius, the fermentation will take 2 to 3 days. 4: After the fermentation is done, place the kefir in the refrigerator. (If you have used a glass jar for the fermentation process, cover the jar with a lid before you place it in the refrigerator
